Cookbook # 31 - I’m Just Here For More Food
I’m Just Here For More Food (2004) is Alton Brown’s baking book, so naturally it happened to fall at the end of summer when I’m not really in baking mode yet. I chose to make Cheesy Poof, which I understand is a South Park reference (I’ve never really watched the show). It’s a quick bread, really—the simplicity of banana bread, but savory. I served it alongside chicken soup, and it’s a good low-effort side for anything that goes well with bread and/or cheese, IMHO. Definitely going in the rotation.
Cheesy Poof
2 c all-purpose flour
2 tsp baking powder
1 ½ tsp dry mustard
2 large eggs
3 T vegetable oil
1 c milk
1 T sugar
1 tsp kosher salt
2 c cheddar cheese, shredded
Place an oven rack in the center position and preheat oven to 375 F.
Prep a 9×5×2 ½-inch loaf pan by spraying with Baker’s Joy and set it aside.
Pulse flour, baking powder, and dry mustard together in a food processor for 5 seconds, then toss with cheddar cheese. Whisk together eggs, oil, milk, sugar, and salt; then add wet ingredients to dry and mix just until batter comes together. Do NOT overmix.
Pour the batter into the loaf pan and bake for 40 minutes, until the internal temperature is 210 F, or a toothpick inserted in the center comes out clean.
Remove the loaf from the pan immediately and allow to cool completely on a rack.
