Cookbook # 33 - Grilled Cheese
This week’s cookbook, Grilled Cheese: 50 Recipes to Make You Melt by Marlena Spieler (2004), is exactly what it says on the tin, an assortment of recipes for grilled cheese ranging from simple to fussy and elaborate. I chose one of the simpler options, Comfy British Toasted Cheese, and truly enjoyed it as a punchy, flavorful light meal/hearty snack.
Comfy British Toasted Cheese
4 slices hearty, flavorful white or whole-wheat bread
About 3 T Bransten’s Pickle, coarsely chopped (my store’s minimal British section didn’t include this ingredient, so I went with the suggested substitution of mild chutney—I think it would also be good with orange marmalade or quince jam)
6-8 oz strong mature Cheddar cheese or English Cheshire, sliced
Preheat the broiler.
Arrange the bread on a baking sheet. Lightly toast under the broiler, then remove and spread the pickle generously on the lightly toasted bread; top with the cheese and pop under the broiler until the cheese melts.
